Wigmore cheese is a vegetarian cheese made from unpasteurised sheep's milk using vegetable rennet. The sappy fruity rich flavour is quite sharp and crumbly when young, but with maturing the edges begin to melt making it a velvety rich mellow tasting cheese. |
